Mmf W/ Imbc Question

If I'm icing a cake with IMBC, which needs to be refrigerated. When do I cover it with the fondant? I'm making a cake for a baby shower on Sunday. It will be finished on Saturday. So should I wait until Sunday morning to cover it w/MMF? I'm just worried about the need for refrigeration. Will it matter?

I know some people have problems with condensation when they remove a fondant covered cake from fridge into room temp. I haven't had that problem, so if it was me, I would ice with IMBC, cover with mmf and stick in fridge until sunday.( i also dont like to wait til last min. incase I run into problems) But I don't think it would be a problem if you wait until sunday to put mmf on. ( i might want to put it in a container of some sort, just so it doesn't pick up the diff. smells of the fridge) icon_biggrin.gif

Thanks, kimberlina25. Tha's what worries me the most is the condensation. I think I'll make a mini cake today and see what happens.
