It might be fun to make a copy of his badge, in BCT, edible image, or maybe 3D, done with luster dust.

Not too many on Google! There is one just a regular cake with a policeman cutout on top of a bow, guess he is either a cookie or made of chocolate.

I made a cake recently for a friend of my mom's who was a retired cop. I used the Wilton 3-D cruiser pan and made a police car decorated with the colors of the area police cars. I used her badge number for the license plate. I can post a picture later if you need one.
