Oh, you're going to hate this suggestion, but I recently did a spice cake for a groom's cake. I tried every great spice recipe I could get my hands on--My friend's grandma's recipe was really great, but the best one was, oh I hate to say this--DH box mix!!!

I really like the buttermilk spice cake from the CMD (if you want a mix).

1 pkg. plain spice cake mix (I use DH)
1 c. buttermilk
1/3 c. sweetened apple sauce
1/3 c. veg. oil
3 large eggs
1/4 tsp ground cinnamon.

Mix all ingredients on low for 1 min. Scrap down sides of bowl & mix on med. for 2 min. Bake in 2, 9in round pans.
This cake is great with apple filling!

I also have a baby food carrot cake (scratch) that's very good. If you're interested.
