...will it be okay on a wedding cake sitting out at the reception for awhile? I am making my SIL's wedding cake and she wants all cream cheese icing. I use a whipped recipe that also has whipping cream in it so I was just wondering if it will be okay if I set it up around 12:00-12:30 and the reception starts at 5:00. I can't refrigerate it at the site because they don't have room and I don't think I would have time to keep it in my fridge and set it up between the wedding & the reception.
Any advice?!

I would be scared to leave it out that long with both cream cheese and real cream. But honestly, I haven't done it with those ingredients so I can't say for certain. Here is a bump, and hopefully someone who has done it before will weigh in for you!!
Edited to add: Would depend a lot on weather/room conditions I think!
Is the reception hall air conditioned? I used to work at a reception hall and i know that the hall is usually pretty cool. Sometimes you can even ask them to turn it down a little. If this is the case it should be fine. If its not then i don't know. Good luck!

It was a two hour trip and dessert wasn't for 2 1/2-3 hrs. - it was fine.
*** I did reduce the sugar to 1/2 cup, it seemed really sweet at 1 cup.... Also added 2 tsp. of creme bouquet.

Yes, the hall is air conditioned and it is already below 40 for the high today here so I can just imagine what mid November will be like! I'm hoping it will be okay if I keep it in the fridge until I leave for set-up.

try a small "test cake" - put the same icing on and leave it out in the conditions u think will b there and see how it goes - if it tursn out bad, then u will know before hand

wow! I live in south texas so it is about 100 degrees all year long! But 2 years ago we were lucky cuz on christmas eve it snowed! by the next morning it was all gone
I probably wouldn't risk it. I might at home, but with a large crowd of people, could there be legal implications? I would think you'd have to follow the food safety laws in your state, right?
I'm not an expert, but you might try Earlene's cream cheese icing recipe and see if the bride likes it because it can stay on the counter for five days at a room temperature of 70 degrees or below and will be fine (no spoiling).
