I have an order for a wedding cake covered in butter cream and then covered in sanding sugar. What is the easiest way to apply the sanding sugar and have it still look nice and neat??? icon_confused.gif [/b]

For the top, you can just sprinkle it on. If you're worried about getting it even, you can use a colander to "sift" it on (experiment with the size of the holes in the colander - I have a metal one with smaller holes that would work well with sanding sugar). For the sides, be sure that your bc hasn't crusted yet. You can cup some sugar in your palm, then press it gently against the cake (you'll want to put some foil or wax paper down to catch the sugar that doesn't stick). Another option is to just toss some sugar at the sides of the freshly iced cake - sounds silly, but will give you a lighter coating than pressing it on. If you're doing one layer at a time, a tilting turntable can be helpful here.

Good luck!
