I have tried 3 different icing recipes and none of them have worked for me.

Problem is when I'm doing the sides you can see the drip marks, it's just not smooth at all, also the icings are coming out transparent, I need them to be white.

Any new recipes? or ideas? I've read most of the posts about petit fours from Jan's links.

Thanks
Joanne

forget the frosting and dip in chocolate...

use wafers or the stuff marked for almond bark in the store.. melt and stir in 2 T crisco or more to keep it a little soft it will set but not crack

then dip the frozen peti four works great and not transparent

Thanks for the great question/answer! I can't wait to try it out! I only tried petit fours once and was soooo frustrated when I couldn't get the sides right. It was for a friend's retirement party, so I really kept trying. I said to myself "I can decorate big cakes. So I can definitely decorate these little ones!" Anyway, I wound up ditching them and making something else. (Very long night!)

Thank you for sharing! icon_smile.gif
