I am entering cakes in the fair and it's going to be in the 90's all week so my cakes will be sitting on display in the heat (not the sun) for several days.

Is there a recipe for white buttercream that will withstand the heat? Also, how well does royal icing hold up in heat? I assume the fondant will be ok?? Thanks!

Royal will be fine. There is a buttercream recipe on CC that is a high humidity icing. It works really well. The flour stabilizes it. If you use an all shortening recipe, that would work too!

Are you doing real cakes or styrofoam? My BC, when applied to styrofoams, turns rock hard ... like concrete. (Don't ask me why ... it stays nice and edible when applied to real cake.)
