Okay my son entered these wonderful chocolate cupackes in this years fair. Brilliant me suggested he drizzle melted caramel on top of the chocolate icing. We melt the caramel candies in the micro, drizzle them and then put them in the fridge until we leave for fair. he wins third but was told that he would have won sweepstakes if he hadn't had the caramel on top ...it kept sticking to the judges teeth !! Egads talk about feeling bad !!! I decided to try it on the remaining cupcakes and it was hard! and it did stick to my teeth. I thought it would have remained gooey like on caramel apples. What did I do wrong????? My poor son was so disappointed, I told him we would enter them next year sans caramel.
well, when I make caramel apples the back of the caramel bag says to add some milk to the caramels when melting them.......I imagine that thins them and keeps them softer!
I would make homemade caramel and it probably wouldn't get hard like that. The candies probably have other ingredients to keep them solid. Try a recipe search-usually it will have brown sugar and butter heated to over 200 degrees.
You could also try the caramel topping for ice cream. I used it a few times and it didn't get hard at all. Good luck!
I would love the recipe for the cupcakes too if you care to share??? Are they scratch????
