What Happened To My Fondant?

This was the first time I used satin ice and the top tier looks great, but the bottom tier developed a ridge around the middle. The cake was cooled completely before I applied the fondant. Any ides what I did wrong or how to avoid it in the future. Thanks.

The dreaded filling buldge. The cake likely needed to settle longer.

Thank you so much for your response. Your probably right. The 6" tier sat much longer than the 10" tier. I'll try letting it sit longer.

can you explain "letting the cake settle longer"? is there a certain amount of time that you are supposed to wait before you put fondant on? i would love to know before i do my first fondant covered cake. thanks in advance...

Make sure you use a stiff buttercream to make a dam around your filling, and also don't overfill your cakes. If you find you tend to overfill, a good alternative is to torte your cakes into 4 layers, allowing you to use 3 thinner layers of filling instead of one thick one.

I torte, fill and wrap my cakes on Thursday and let them sit overnight. Then frost and decorate on Friday. Deliver on Saturday.
