Best Chocolate Cake Mix??

What is the best chocolate cake mix to use with the cake extender recipes?? I have done the white, yellow, and french vanilla cakes but would like to try some of the chocolate flavors.

Also, when using a cake extender mix with a chocolate cake do you add cocoa powder to the recipe? The recipe I use calls for an extra cup of flour and sugar...

DH is my favorite - the one that has the butter in the name....can't think of it. I made it with the extender and just followed the recipe.

I like the Duncan Hines Dark Chocolate cake, and I add pudding, replace the water and oil with milk, then add the 3 eggs. I get RAVE reviews on this one and the triple chocolate, too.

I use the DH Chocolate Fudge Cake mix; add chocolate fudge pudding, milk instead of water, and 1 extra egg (total of 4). I made one last week for my hubby's job, they loved it!!!

I am going to tell you something you might not want to hear.

Make your chocolate cake from scratch. The recipe? Back of the Hershey's cocoa box. Easy squeezy to make. I swear - it's the BEST CHOCOLATE CAKE IN THE WORLD. And strong enough for tiered cakes too.

Debbie, when you make the scratch cake, do you use AP flour like the recipe suggests or do you use cake flour?

I was just looking at that recipe and thinking about trying it but I thought the cake flour might make a nicer cake.

Normally, for chocolate cake, I use the DH devil's food mix.

My grocery store carries DH Devils Food or DH Butter Chocolate mixes. I bought the Butter Chocolate and will try that one out...

I have made the one in the back of the Hershey's cocoa. It tastes great... I just want to have a great chocolate cake from a mix too... They seem to not dry out as fast as the homemade versions...

I have not had great luck with DH chocolate cake and an extender. Mine have come out kinda "gummy".

I'm trying the Hershey's recipe next! Can't wait!

Was the extender recipe you used the one where you add an extra cup of flour & sugar? and sour cream?

I use DH devil's food. I add the ingredients called for on the box plus an extra cup flour, sugar, the sourcream, 3/4 tsp. salt, an additional egg, 1 tsp. of vanilla, and one packet of the premelted chocolate (ChocoBake?). Or you could use the cocoa powder with some oil.

I don't do the extender, but DH Devil's Food is the only chocolate cake mix I use. icon_smile.gif I do the pudding plus egg doctor, and if I have it on hand will use buttermilk in place of the water.

That's the one - the "Enhanced Cake Formula." I 've had great luck with it with everything BUT chocolate. Not sure why?

It is doctoring a cake mix by adding extra flour, sugar, etc. Makes extra cake batter... To me, it makes the mixes taste more like scratch. There are a few recipes here at CC that use this.

Now, when you guys say you add pudding... do you add a premade individual serving of pudding or the instant pudding in a box, plain from the box or made with the box recipe?? icon_confused.gif

Just the dry powder from a box of instant pudding (not the kind you cook).

I just made the Hershey recipe and with white buttercream filling and perfectly chocoate chocolate frosting for the top and side of double layer 9" cake. It always comes out tasting soooooooooooo good. One thing you want to keep in mind is the setting of your oven temperture cause most oven tend to give off more heat especially when bake chocolate cakes. I use aluminum cake pans instead of the darker cake pans. If I were to use a dark cake pan, I would reduce the timer for five or ten minutes less, but I check my cake after being in the oven for 25 minutes with a cake tester. As for adding pudding into the cake mix or scratch, I always use the Jello Instant pudding and I add an extra egg cause I like my cakes to be moist. Food Net Work web site has a slight different version of the Hershey's Perfectly Chocolate Chocolate Cake, but I got my recipe from www.hersheys.com and there are more recipes to choose from. I just copy and paste to my document and saved it in my cake folder for later use. Hope to be of help. icon_smile.gif

DH Dark Chocolate Fudge - but this is NOT a good 3D cake because it has a tendency to crack.
