I did some hearts out of chocolate today. Outlined them in semi-sweet and filled them with pink tinted white chocolate. I melted the chocolates in the microwave like I always did. Added a bit of color as always. Put them in the fridge to harden. They did, but after a few minutes out, they got soft and mushy. Any idea what might have happened. BTY my airconditioning is on and working so it's not the heat.

It's been awhile since I did this and maybe I'm forgetting something.

Did you add anything to the chocolate? Was it real chocolate/chips/candy melts?

I had that happen with white chocolate chips with a little vegetable oiladded, but that was because it was about 90 degrees in my kitchen.

I used americolor black with the semi-sweet and rose with the white. Could that little bit have done it?

So, you used chips, right? And then all you added was the Americolor icing colors?

I know that the colorings can do weird things, but mainly seizing.

It's just weird. I'll try it again only this time use petal dust or something else like that. Just can't imagine what went wrong.

i had the same thing happen today. i used ghiradelli milk chocolate chips, nothing added, melted slowly in the microwave for chocolate dipped berries...it never hardened either. STRANGE. its about 78 in my kitchen, although i had them in the fridge.
