I have a last minute order for Friday morning. Customer wants (still undecided) a chocolate cake with a caramel filling or something involving caramel. Do you have any suggestions for me.

what about a chocolate truffle layer of filling with a drizzle of carmal sundae syrup on top of the filling? Best of both worlds!!

foxy does this get a little hard after cooled (I LOVE homemade caramel icing)? I love this icing on a chocolate cake......a mud cake with this is good also..

Well, yeah, kind of hard. I haven't used it ON the cake yet. But since it is just a filling for mine I think it will be fine. Or at least I hope so icon_smile.gif

I have used ice cream topping caramel and it was delicious and simple.

How about baking a chocolate cake but substituting caramel coffee creamer for the water or milk in the recipe. I did this with a white cake (and added a box of butterscotch pudding) and it was yummy, yummy, yummy.

Here is something I stumbled upon and it tastes fabulous. I make a bavarian cream filling and then I add caramel syrup (the kind used for ice cream sundaes). It makes a very smooth and delicious caramel cream filling. My customers rave about it. thumbs_up.gif

couldn't you use a whipped cream and then add the carmal also?

The caramel breaks down the whipped cream, but if you use a bavarian cream that is like a pudding base, then it makes a wonderful caramel cream!

Try thisicon_razz.gifrepare 1 cup sugar.Melt 1/4 cup of this until amber color is reached (over low flame). Add 1/4 cup flour. Whisk until well blended. Add 1 1/2 cups milk. Add the rest of the sugar and cook until thick. Add 2T butter and finish cooking.

I know it's too late, but I've used Dulce de Leche by Nestle. It's in a can in the foreign food section of the grocery store. Tastes like caramel!
