Has anyone had success making homemade pineapple filling?
The stuff in my local store looks old & horrible.

Try this out... Take a large can of crushed pineapple and drain it in a colander for a long time. Add pinapple juice to the drained liquid to make 1 1/2 cups. In a saucepan, combine the liquid, 3/4 cup of sugar, and 4 tbls. of cornstarch. Heat till thick constantly stiring. Remove and cool completly then add the pineapple to it. icon_smile.gif

I was wondering... can you freeze this filling?

I haven't tried to freeze filling. I don't see why it couldn't be done. Better yet, take the leftover and put it the food processor till smooth, then use it as an ice cream topping or a fruit dip.

Not sure if you're interested in trying this but I've mixed crushed (and drained) pineapple in with a little bit of buttercream and used that for the filling on several cakes and it always gets rave reviews. Its a pretty easy thing to do and tastes great!
