Neither did mine so I was wondering the same thing...
You should have done the fondant rose in Course III. Its definitely there in the Course III book.
There is a tutorial here for making a callalilly from gumpaste. If you wanted to do it from fondant you would need to add gumtex to the fondant (will make it dry harder faster).

The course 3 book that I have doesn't have it either its the book with the yellow fondant cake with the easter lily and petunia arrangement
Ohhh, did it have the fondant clown cake? If so that is the last course three before they changed their books.
