I've been asked to make an anniversary cake for a friends inlaws 60th anniversary. I know the father in law has diabeties and I would like to make a small cake for them to go along with the main cake, but it needs to be low sugar and low fat. Is there a good recipe for a cake and also a decorating frosting? Would appreciate your help Thanks !
There is a good recipe on the Splenda website. The cake itself is called "Spring Fling Cake". It was really good and very light. Has anyone come up with any good diabetic cakes/icing? I need to make one for my MIL tonight (both she and FIL are diabetic) for Mother's Day. From what I have read in my search (make note TC ) the Splenda Cakes didn't rise well. Also, no one has come up with a decent icing. Any help would be greatly appreciated!
