I'm A Little Overwhelmed! Help....

I went from making two cake for next weekend to 5 cakes....never done more than two in a weekend...so I'm freaking out a little - I'm just a weekend warrior. So my plan is to be ORGANIZED before I get elbow deep in sugar. 2 of the parties are feeding 50!

Right now I'm trying to figure out how much bc and mmf I will need. Here is my plan....for those of you professionals - does this sound like it will be enough. One of the cakes is an ice cream cake - so that's not figure in here.

I use an enhanced formula mix - so my mixes will fill two 8" and one 6"...but I've got all these wacky pan sizes to deal with.

Party/Cake 1 - Stacked Pillow cake, mmf covered - for 50 (this party also has the ice cream cake.
2 - 8" rounds
1 - 7.5" square
1 - 9" square

Party/Cake 2 - Horse cake covered in mmf for 15
2 - 8" round

Party/Cake 3 - 1st Birthday - all bc icing, for 50
1 - 12 x 17"
1 - Character pan (shaped as a 1)
1 - tiny mini pan (shaped as a 1)


I'm thinking I need about 8 lbs of bc icing and about 3 batches of mmf. Does that sound about right?

Also, please say something like.....slk - you can do it, yes you can!!! Don't freak out, it will be OK!...lol....'m trying to be my own cheer leader!

OK, I'm not a professional, so I can't help you with the measurements, but I have something else for you!!!

Go SLK, you can do this! You got it, oh yeah!!!

You can do it!!!! But you are going to need more icing than that, IMO. I used about 14 lbs for a 14, 10 and 2 6 inch cakes. I am a generous icer, but I still think you will need more. I can't give a guess on the MMF as I mostly do buttercream cakes.

Are they all due on the same day? I baked one day, made icing, filled and crumb coated the next and iced and decorated on the third day.

Yes..it can be done but the key is Preparation in advance and you already mentioned that so I think you will be just fine.Bake all the cakes a few days before and either freeze them or refridgerate them tightly wrapped.Make all you icing in advance and store in a huge bowl.Tint any colors you will need etc..and make all decoarations in advance that need to be.I have frequently had 5-6 cakes in a weekend and it can be done but organization is the key!! You go girl!!!

Cindy - I think you are right, I do need to make more icing. I always tend to underestimate how much bc icing I will need.

Mac - that's a great chart. I just saved it to my favorites on my browser. Thanks!

Kiddiekakes - 5-6 cakes in one weekend - wow! I'm impressed girl. You make me feel like I need to shut up, stop whining and bake, bake, bake! haha.

Two parties are due Saturday morning. I then have a wedding to go to Saturday afternoon, then the third party is Sunday afternoon (I'm actually going to that party - it's for my niece so that one is the most special cake)

I'm am planning on baking and freezing on Monday since I'm off work. I don't usually freeze cakes - but I feel like I have to this time. Then I'm going to make as much icing and mmf as I can the next two days.

For one of the bc cakes, I was going to try using the wilton spray on color. The decorations she gave me has a speckled yellow on one part and speckled purple on the other - so I thought that would work - and save some time coloring bc.

I don't want to rain on your parade, but I have used the spray color and was not really impressed with them. You have to be very careful because that stuff gets all over everything. If you have some, I would practice a little on some paper so you can get an idea of what it is going to look like.

One year I made 11 cakes for my daughters Halloween function at school.
I made the cakes
iced them
and decorated them
I had an assembly line.
I will say one thing. I was making them for kids. So I did not give it 100%they would be impressed with anything hommade and decorated!

I am with you on this one. Now, I'm no professional, but here is what I went through recently.

3 weeks ago, I started out with a two layer 8" round order, and an order for a 3 staggered tier design of my own creation for a birthday party. Within 3 days, I was up to 11 cakes! The woman who wanted the 3 tier called and said she also felt she needed a sheet cake!

Still, I kept getting more requests all week long. By that Thursday, I unfortunately had to turn down orders. There was no way to fulfill them in the time they wanted them. It happens, I guess.

Since I knew about the first 4 cakes (3 tier incl.), I had baked them a few days before and froze them. I didn't try to figure out how much frosting I would need. I just kept making batches and storing them in tupperware. When all was said and done, I only had a small amount left. (It only takes 10-15 minutes for me to make a double batch of BC.)

As I got calls for more cakes, I would immediately bake them, level them, freeze them. I also used post it notes to label which cake was for who, since I am easily confused at times. I was making frosting all week long, whenever I got a chance. I worked at night after the kids went to bed. It was just nuts, but I pulled it off, everyone was happy, and all the cakes turned out great.

This chart will give you an approx. amount of how much frosting you will need for each cake.

Cindy - Yes, I have used the spray stuff before on mmf.....and oh my how messy was it that day!!!! I used red and blue on a 4th of July cake. I was cleaning up red overspray for weeks. I now know to cover EVERYTHING up! I wish I had your tip before I tried that cake....thanks.

eriksmom - wow....you did it! I'm so impressed that you actually told people no....that's a hard thing to do. And I love the post-it note idea on each cake....that's ingenious! And thanks for the chart.

I'm planning on having a baking marathon tomorrow....and an icing marathon...and an mmf marathon.....working on getting a sugar high!

Well, I survived this weekend. Thanks for all the encouragement!!!! Here are pics of the big cakes. I also had a small smash cake and an ice cream cake.

Again, thank's to all my CC friends and supporters. Now I'm gearing up for a 3 cake weekend next week....so, I know I can do it!

also - btw, I found out i'm pregnant with my 3rd child this weekend.....still a little freaked out....but the cakes got done...lol

OMG.. I cannot believe you got all those done and they are perfect! Good job on all of them, thats alot of hard work! Congratuations on your pregnancy, your lucky we have been trying for two years to get pregnant for a second child! You have your hands full! Good Luck!

I just read this thread,I might be too late to encourage you but not to late to congratulate you!! You did an absoulutely great job. Each cake looks like it was the only order you had, you did such a great job on each one. No one would ever guess you did so many.

Thanks so much everyone. When I took all the orders I had no idea I was pregnant. I found out Thrusday night and started decorating everything on Friday afternoon....so, I was a little bit ....em, scatterbrained.....

I'm starting to get used to the idea.....as I told my husband and mom, I'm getting there. Having a 3rd child was not in the cards...but I guess it is now!

Again, THANKS EVERYONE for the encouragement and congratulations.....

Princess3 - good luck. We tried and tried for 3 years to get pregnant with our second child - when we finally "gave up" that's when it happened. So my best advice for you is to relax, iit will happen....
