I am making a baby shower cake for august and live in sunny california. I will be using fondant on a two tiered cake, but I need some sort of buttercream and filling ideas that will be stable and withstand the heat. Any ideas? I was thinking of fruit fillings but what about buttercream??? thanks in advance.......

Hi there,

Have you seen this post?

"Need good Buttercream to stand up against Heat and Humidity?"

It was very helpful for me. This may help you with the buttercream part, at least.

Here's a thread that has non-refrigerated filling info, as well as how to use Rich's Bettercreme & Pastry Pride:

Above also includes a handy safe storage chart for frostings and fillings, as well as links to all CC frosting and filling recipes.
