I've been looking at ovens for our hopefully soon to open cake studio. We were looking at the Deluxe Oven CR-2-6 and going with a double stack. Now we are leaning towards a single rack oven. What are you using? Did you buy new or used? What would you do differently now that you have 'been there, done that'?
If your in the markert for used equipment try looking on http://www.auctionzip.com/ and going to a local resturant supply auction. I recently bought a Blodgett electric full size oven (that works but needs a good scrub) for $5.00. And a 1/2 size gas one (at a different auction) for $100. Also have picked up cash register, pans, racks and tables pretty cheap. Just missed a copycake machine it went for $30.

oh....I don't even have a commerical kitchen yet so I can't say if they are going to be right for me or not yet, just going to store it for a while until I'm ready, they were too cheap to pass up.
I have a US Range/Garland and you can load it up with cakes its so big I went with the single oven and 6 racks but use 5 racks. I bought it new. You need to check your electrical to see if you have a phase 1 or 3 and if you have 240v.

CakeMasterG, I have a Deluxe CR2-3. I bought it new 6+ years ago.
It was my gift to myself when I opened my shop. I would have bought the CR2-4, if I did it again. When brides peek into my commercial kitchen, I show them my "special cake oven".
