I am fairly new to this site and am seeing the "Viva" method for smoothing cakes. My question is this, why use Viva -which could transfer tiny cotton like fibers to the frosting? Why not use parchment paper instead?

I've heard of people using parchment also. I use viva because I've never used anything else and I've had great results. I've also heard of people using computer paper. Basically anything smooth will work.

Viva doesn't have lint like the other brands I've noticed.

Another thought...after the buttercream is set a little, use a metal spatula dipped in hot water. Makes it really smooth! Just keep dipping it.
