I have another question about icing sheet cakes. Does anyone know how many are needed to ice an 11X17 cake? Is there a chart somewhere on CC that gives an idea on the amount needed?

You can use this chart from Wilton:http://www.wilton.com/cake/cakeprep/baking/times/party_2inch.cfm
It does not have 11x17 on it though but based on 11x15 which needs 8 cups for a 2 layer cake, you probably will need about 9 cups for 2 layers, or 4.5 for a single layer cake.
