I've been looking on the internet and in cookbooks for a couple of months for a Pumpkin Shortbread Cookie recipe with no luck. I know there has to be one as I've seen boutiques on the internet selling the cookies. I would appreciate any help with a recipes or even from chefs out there on how I could turn a regular shortbread recipe into pumpkin shortbread.

Thanks!

Wow! That's tough. The moisture from the pumpkin would cause any standard shortcake recipe to no longer be..."short".

Do you have the whimsical bakehouse Christmas cookies book ? The spice cookie recipe that they make the tree sculptures out of is a very durable, very tasty cookie recipe. I would bet that recipe would handle the addition of well drained ( as in overnight in a cheesecloth lined strainer, then squeeze the dickens out of it) canned pumpkin very well. That's the recipe I'd use to begin my experiments.
