are buttercream roses hard to make? I dont know how to do them. I have quite a few books but I still cant follow what it says. icon_cry.gif

Yes, for me at least. I've given up and am now only making fondant or marzipan ones! Good luck with yours, people say it just takes practice, but I think that you either can or can't do them well, and I can't (not to my standards anyway lol!)

I am a visual learner, and couldn't not make a rose until I took a class and actually SAW the teacher make one. I watched her once, and was like....DUH! I just made 41 of them yesterday!

I haven't made BC roses in forever. I love the more real look of gumpaste and fondant.

I am like jen - I had to actually "SEE" someone make them, and then I caught right on! I am a visual learner too.....no matter how many books I read on it, I just could not get it.

Just keep trying!

I did some roses last night for the first time in 5 years and I felt like I was starting over.

Make sure your icing is pretty stiff and that will help a ton. (mine was waaaaay to soft and made it nearly impossible to get a good rose, let alone transfer it to the cake!)

Just practice. You can always dump the bad ones back in a bowl and keep trying.

speaking of BC roses, how early can you make them? I wanted to make mine today for a cake on saturday, will they be okay in the fridge until then?

I have a hard time with them. One woman in my Wilton class made royal icing bases for her roses and she said that it made everything tons easier.

You can make them a couple weeks ahead. In my course 2 we did all buttercream flowers and did them in week 2 & 3 and put them on a cake on week 4. They are really easy to work with when they are a little hard!

You can even make them ahead of time and put them in the freezer. Make sure your icing is stiff enough to begin with and to deal over time with hot hands (if you are anything like me). I have also learned that a little bit of piping gel in the icing helps smooth out the edges of the petals. Good luck!
