Just finished frosting a carrot cake w/cream cheese frosting-didn't do such a hot job estimating how much frosting I'd need-does anyone know if it will freeze & thaw well? Never had a problem w/extra buttercreams but the cream cheese is a first for me.

Since cheesecakes are mostly cream cheese, and they freeze/thaw fine, it seems to me that cream cheese frosting would be fine too. I don't know for sure, so maybe someone else will let us both know!

I tried it recently. It worked out just fine - had enough left for another carrot cake and it was delicious.

Great to hear-I'm relieved that my leftovers won't go to waste!! Unfortunately, carrot cake isn't one of my personal favorites so I didn't have the option of making one for home! Thanks!!
