hi, im looking for a good gumpaste recipe.

gums that are available to me are gum tragacanth, carboxy methyl cellulose (cmc) and gum arabic.

does anybody have a good gumpaste recipe that they would kindly share with me.

also, does anybody know what the difference between these gums is - besides the price!!! can they substitute one another or are they completely different?

while i wait i was looking on the net and is gum tragacanth just gum tex?

Gum Trag is short for Gum Tragacanth which strengthens the paste as well as giving elasticity. I'm pretty sure Gum Arabic does the same. Gum Tex I haven't heard of.

One of my decorating books mentions that gum tragacanth is also called gum tex, just two names for the same thing.

Hey thanks for that info JulieBugg2000 I haven't seen that in any of my books. I also wanted to add that gumpaste recipes are in a lot of cake dec books you have to do a trial and error and find out what works for you best.

so are all gums the same strength? would 1 tsp of gum trag be equal to 1 tsp of gum arabic?

Hey I've led you astray icon_redface.gif the Gum Arabic cannot be used in place of Gum Trag it is used more for candy and glazing to give a high sheen like a leaf. You can use Tylose in place of Gum Trag. I've been looking through some old cake dec books. Sorry about that icon_smile.gif
