Chocolate Ganache + Fondant... When Is The Right Time??

Hi Everyone!

I just finished covering my cake in chocolate ganache. The event is on day after tomorrow.

i'm just wondering, when should i cover my cake in fondant? If I do it now, will it be ok if I left it outside? (I heard that fondant acts like a protective coating and helps seals the freshness of the cake in...)

I'm in Australia, so it's currently winter and it is quite cool outside...

hello. I am confused. You first glazed the cake in chocolate and are also going to cover it in fondant?

yes thats right... i wanted to have some icing on the cake for the people who wont eat the fondant.

Should I not do that?

most of my mud cakes have ganache then fondant over them, i cover them staight after the ganache.

it will be fine until the event!!

nearly all of my cakes are covered and decorated 1 to 2 days before they are needed...

no i'm sure its fine. I just never heard of that before. I always use butter cream underneath and either glaze or cover in fondant. Did you have butter cream on the cake too?
