Filling Ideas For A "snickerdoodle" Cake?

Anybody have any ideas for a filkling for the Snickerdoodle cake that 's in the Cake Mix Dr's book? The book suggests just adding cinnamon to buttercream, but that seems so boring to me.

I did a search for cinnamon in the recipe section, but there weren't any fillings.

This will be my final cake for Course III class on Monday.

Apple pie filling? Or as Doug suggested, caramel. I'd put caramel on everything if only my customers would let me.

I made snickerdoodle cake, and I filled it with cinnamon buttercream. BEST CAKE EVER!

I bet cream cheese filling would be awesome in it too.

Are you using Cake Mix Doctor's recipe for Snickerdoodle cake? I very highly recommend the cinnamon buttercream icing that's in the book too. OR...I would make the delicious cream cheese icing that's in there, and add a touch of cinnamon to it. Or, make a cream cheese custard/pudding-like filling, and add a touch of cinnamon to it.

I usually am not too big on cake frosting, but oh my gosh...that cinnamon buttercream was soooooo good, I was so glad that there were leftovers...haha.

I promise, you can't go wrong pairing the cinnamon buttercream with it. icon_biggrin.gif

I think I may do the cinnamon buttercream and add a package of cream cheese to it. Do you htink that would work?

I'd crush up a bunch of real snickerdoodles into the buttercream for the filling, and add some cinnamon!

Another vote for Cinnamon Buttercream, especially if using the recipe from the Cake Mix Doctor book. YUMMY!!

Cinnamon Buttercream

Will frost a 2 or 3 layer cake (Assuming 8 or 9 inch, she doesn't specify in the book)

8 Tbls butter at room temperature
3 3/4 C confectioner's sugar, sifted
3 to 4 Tbls milk
1 tsp vanilla
1 tsp ground cinnamon

Beat butter on low speed until fluffy. Add confectioner's sugar, milk and vanilla, blend on low speed until mixed. Add cinnamon and beat on medium speed until light and fluffy. Add more milk if necessary to acheive desired consistency.

I totally agree! It is YUMMY with cinnamon buttercream or cinnamon cream cheese filling! Hands down, DH's favorite cake with the cinnamom buttercream!
