Italian Meringue Buttercream is the best!

It has no shortening and no powdered sugar. All Butter. No, it is not white-white. You can flavor it many ways and it also makes a good filling when flavored.

The recipe I use is called Kaye's Buttercream from the Whimsical Bakehouse book. Here it is printed on this web page:

I know a lot of people use the recipe from Martha Stewart--It is a little smaller recipe, so maybe you want to start with that, since it uses only 5 egg whites and 1 lb butter--While you are perfecting the method.

Thanks everyone for sharing all this information. I never would have known that you can get all this stuff out there on the web. It truly is amazing. What did we do before the computer? Go to the Library? thanks for all the recipes. I will definitely try some of them.
