Is there a way to do daisies, pansy's etc. on a flat flower nail out of buttercream and somehow transfer them to the cake, or do they have to be piped directly on the cake?

Funny you ask that? I was going to ask how do you make buttercream roses and dasies instead of having to use royal icing. In Course II we learned how to make all kinds of flowers out of royal icing. Royal dries hard and the flowers can stand up to being moved and placed wherever. However, I can't see anyone eating them and they make cutting the cake a chore because they are hard and you can't just slice through them. So, to anyone that reads this, how do I make daisies and other flowers out of buttercream and then transfer them on the cake? Or do I have to make them directly on the cake and how would I do that since I am now used to a pattern being taped on my flower nail?

You can make air-dried buttercream flowers (recipe below). Do them just as if you were making them from royal. Then let them air dry for at least 24 hrs. Roses can take up to two days. They'll get hard but not as hard as royal so you have to handle them gently. You can also freeze them and then put them on the cake.
