Does anyone have any diabetic recipes for cake and frostings? I need to make a b-day cake for a diabetic girl.

If you get information on this I'd like to have it too. I have a customer that will order cakes for everyone else but wont eat it because of her diabetes. It would be nice to give her something she can enjoy too.

I have experimented with my regular IMBC recipe and used Splenda in place of the sugar? And it worked well! Tasted good! My head Chef and I were plesantly surprised! I preferred that over the sorbitol because I keep hearing the sorbitol can cause cramping etc.
