Hi everyone, I'm looking for a high humidity icing for a wedding cake that will be outside. Any help will be appreciated. icon_smile.gif

if you are going to have the cake outside, i would recommend an all shortening or an almost all shortening icing. I would also put meringue in it, it will help it to hold up better.

I've used that icing in the past but, it always seemed to crack on me while transporting while lifting it. The Bride is very picky on not a sweet icing.. We're making part rum cake & marble
Appreciate any other wisdom you might have..
