Greetings!

this is my first post, please forgive me if this has been repeated many times over.

i would like to try making ice cream filled cupcakes, has any one tried this?

i am a cake making rookie. any tips on how to fill, tools to use and what type of ice cream works best?

This would be messy. I haven't seen it done, but here is what I would do if I felt like making a big mess in my kitchen.

Start with making the icecream layer.
9 x 13 pan lined with plastic wrap
A round cutter, just a bit smaller than the top of the cupcake
softened ice cream

Spread the ice cream into the plastic lined pan. Re-freeze. Remove the wrapped ice cream. Quickly cut circles of ice cream. arrange on a lined sheet pan and re freeze briefly.

Cut the cupcakes in half, keeping the tops together with the bottoms.

Put the ice cream rounds in between the cupcake halves, refreeze.

I saw a pic of something like that in an old BH&G mag JoAnn but the ice cream was on top. I liked the pic so much I scanned it and kept a copy icon_lol.gif ...
