Hello,

After a break of several year, one graduate degree and two kids later, I am getting back into cake decorating. My niece is getting married in July and has asked me to do a cake for her. I plan on making some mini practice and sample cakes before hand and I need a good supply of fondant on hand. In the past, I have used the Wilton fondant but didn't really care for it. I see that others have the same opinion.

Could anyone recommend a good source of fondant for me?

Thanks,
Julie, sure to bug you will a million questions before July. icon_biggrin.gif

Hi Julie. I think you should try the Marshmallow Fondant (the recipe is on the site), it is really pretty easy to make and much better tasting. Janice

I would love the recipe for Satin Icing!

I have read about the marshmallow fondant, and it sounds wonderful. I think I am going to take the easy way out on this one though. I live in NY and the wedding is in ID. I will arrive in town 24 hours before the wedding, so I am going to have to cut corners where I can.

I think Jackie has to go thru a certain process before the recipe shows up..so give it some time before you try and find the recipe.

Ok try again. Makes 750g/ 1 1/2 lbs. Cover 23cm (9 inch) round cake.

60 grams(2oz) butter or margarine
4 tablespoons lemon juice
4 1/2 cups icing sugar, sifted
food colouring and flavoring as needed.

Warm butter/marg and lemon juice in a pan until melted. Add 1 1/2 cups of the icing sugar and heat gently, stirring until dissolved.
When the mixture begins to simmer at the sides of the pan, increase the heat slightly and cook for 2 mins until it boils gently, do not over boil as icing will become too hard.
Remove from heat and add 1 1/2 cups icing sugar, beat thoroughly with wooden spoon, then put in a mixing bowl.
Gradually mix in enough of the remaining icing sugar to give a soft dough, turn onto surface lightly dusted with icing sugar and knead till smooth, adding colour and flavour if needed.
Wrap in cling film, will keep in fridge for approx 6 weeks.
