I'm trying to figure out what kind of cake would taste wonderful at my fall wedding but not sure which flavor. I'm getting married in October, but I would like to stay away from a pumpkin flavor if possible. Although if the recipe is that amazing for a pumpkin cake, I'd prefer to go in a different route.

Anyone have any really delicious fall wedding cake flavor ideas?

The thing that comes to my mind is either a carrot cake or red velvet...maybe with a cream cheese frosting.

or anything featuring a nut flavor:

hazelnut (w/ nutella or chocalate frosting)
butter pecan
walnut (and if you like them black walnuts)

could also reverse the hazelnut combo...chocolate cake w/ hazelnut filling/frosting.

how about an apple spice cake? or a caramel turtle cake? I also like the hazelnut idea.

My DF came up with mixing carrot and spice cakes, and that was GREAT. He also wants to try chocolate spice, which should be good, but haven't tried it yet.

How about a butter pecan cake with a tub of caramel pecan frosting mixed into the batter and then use a cream cheese and caramel ice cream topping for the filling. It's my best seller.

One of my client's favorites is "Hummingbird Cake" with Cream Cheese Icing. It is a very dense, but moist, banana and pineapple cake with just a teaspoon of cinnamon in the batter to give it that extra something. My number one best seller would be "Red Velvet" With Cream Cheese. I consider both of these fall or winter cakes. I'll put a picture of the Hummingbird wedding cake I did last fall in my photos. Chocolate knows no season. If you want your guests to snatch up cake, serve chocolate with Chocolate IMBC filling and icing.

On chocolate icing or fondant (Chocopan is very tasty) you could decorate with green hydrangeas, or green apples, or pears. So mod, but still seasonal.

I totally agree with your suggestion on the Apple Caramel Cake with Cream Cheese Caramel filling. It's from Martha Stewart's wedding magazine. I made it a couple weeks ago for a wedding cake and it is awesome!!! My daughter is getting married in October also and I am making the same cake for her. Try it, it's delicious.
