When I make sugar cookies, I roll them to even thickness but when I cook them little and big bubbles appear why? And they don't go away.

thank you

Which cookie recipe are you using? I use the NF recipe and rarely get bubbles. If I do, I "smooth" the cookie with the flat side of my cookie spatula as soon as they come out of the oven.

2 t vanilla
2 1/2c. flour
1 egg slightly beaten

I've occasionally gotten a large bubble on a NFSC, but if I catch it right away, I can pop it with a knife/toothpick/skewer and smooth it back down when it first comes out of the oven. I don't know how to avoid this as I'm not sure how the bubbles get in there to begin with. icon_smile.gif

Too much moisture in your dough. Add another 1/2-3/4 cup flour and you should be alright. I wouldn't add any baking soda/powder, though. HTH icon_biggrin.gif
