I am finally doing an all chocolate cake! Thank goodness, b/c I'm not a huge fan of plain buttercream w/ chocolate cake. Anyway...I will still be doing decorations in buttercream, but the rest will be chocolate. My question is this...I really like to get my icing very smooth by smoothing with a paper towel...is there a suitable chocolate frosting that I could achieve this with? I have added cocoa to buttercream before, but it still isn't very rich to me. Ganache seems too rich for me in this case. Any recommendations for something in between? Thanks in advance for your input!

Wilton's chocolate buttercream recipe crusts, and it is delicious...especially if you use unsweetened Ghiradelli chocolate squares! Yum! You can see a groom's cake I did last weekend with it in my photos, top row. It smoothes very nicely.
