What Does Milk Do

to the cake? i've been adding milk instead of water, which turns out fine. just wondering what the milk brings to the cake? does it make it more dense?

I am not sure if it makes it denser but when I use milk I always use whole milk and I think that it makes the cake richer.

I think it does make the cake more dense.

I don't know about dense, but it does add flavor and a tiny portion of fat. For chocolate cake though, the devil's food variety, water is best according to Cook's Illustrated, but for other buttercakes, either milk or buttermilk is preferred.

I bake from scratch only and always use milk, or buttermilk,(only sometimes a nice cup of coffee for a coffee cake) I was tought so home and it works for me pretty well.
