Storing Fondant, Rolled Buttercream, Etc.

I made rolled buttercream about 2 weeks ago and put it in the fridge all sealed up in saran wrap, foil wrap, and a plastic bag. I was wondering how long it would last. Also, should I freeze it?

Same thing w/ fondant - I haven't put fondant in my fridge, but I have it wrapped up - I just wasn't sure if that was the safest/best way to store it or if I should freeze that as well.

Finally, buttercream - if it is made w/ actual butter, how long will it last? Does it have to remain refrigerated?

Fondant will last a long time, well wrapped on the counter for months-as long as it isn't to warm. It is OK to refrigerate or freeze it. You will need to warm it up and knead it when you are ready to us it.

Rolled buttercream, should have about the same shelf life, but protect it from extreme heat and light it has color.

Products with real butter can last several days, but are much better refrigerated or frozen for long-term storage.

I keep my rolled buttercream in the freezer. It defrsts so quickly when you need to use it. Just wrap it in small balls separately in plastic wrap and put all the wrapped balls in Tupperware. I have several colors wrapped individually as well as white. It can be re-frozen too.

I have Marshmallow fondant stored in the cabinet. wrapped in plastic wrap and in Tupperware. I froze it once and found it too hard too work with quickly. You do need to microwave MMF for several seconds to make it pliable when you want to use it .... but the rolled buttercream is always soft.

I have rolled buttercream in my freezer that I made over a year ago. It is still good. No freezer taste because it's wrapped so well. Anyhow, there is nothing perishable in it.

Here is the recipe I use ... in case that's somebody's next question:

Rolled Buttercream:

1 C shortening
1 C light corn syrup
1 tsp. vanilla
1/2 tsp. salt
7-8 C powdered sugar

Beat shortening and corn syrup in mixing bowl until creamy.
Add vanilla and salt.
Mix in powdered sugar.
It will be VERY THICK!

Knead until smooth. It is greasy, wear gloves.

It is easy to color.

Store wrapped in plastic wrap AND in an airtight container in the fridge several weeks or in the freezer several months.

It deforsts quickly.
