Hi,

I decorate a cake with flowers that are made from royal icing. I need to keep the cake in the fridge before the party. In class, I've heard not to refrigerate royal icing decorations. A friend has done it and thinks it's okay. Any thoughts out there? How would one store a cake once it is decorated and partially eaten if not in a fridge?

Thanks in advance,

Update:

I tested it out before I decorated the cake. I left a few of the flowers in the fridge for 24 hours. When I took them out the next day, they were still hard.

After decorating the cake and storing it in the fridge, the flowers retained their shape. After a few days they may have softened but that's okay since it is easier to eat them. icon_smile.gif
