Carrot Cake...question

I made a carrot cake last night. I this is my first one and it came out more like a bread than a cake. It wasn't cake like sweet. And it wasn't totally dry but not as moist as my other cakes. I used the cake recipe from the recipe area here. It was the "carrot cake XI" recipe. I have looked it up and most other recipes (here and cookbooks) are basiclly the same. I will say that I only used 3 cups carrots and only 1 cup oil....just because I ran out of oil. Oh and I omited the nuts.

Do you think 1/3 cup less oil will make it sweeter and moister? I haven't had carrot cake in a long time so maybe I just don't remember what it is suppost to be and taste like.

Any suggestions or recipes would be a God send!!!!

Hi...

I usually get many requests for my carrot cake. I tinkered with the recipe I used and have cut the oil down to about 1/2 cup. I replace the rest with 1/2c apple sauce and 1/4 c crushed pineapple.
