Chocolate Strawberries Cascade

So, I'm a bit full of questions this week, or it seems that way to me. I have 2 tiered chocolate covered strawberry cake to do for friday. Easy cake all in all, but it's the first time I've had to do a cascade down the side. So we had our teacher appreciation luncheon at the kids' school yesterday, so I did one for them to say thanks and also for a trial run. Well it went over amazingly, but the strawberries started falling off and weighing the cake down where they sat on it. (I found out through one of the volunteers.) I do not want this to happen to the $115 cake I have going out on Friday, so I was wondering if there was a trick to the placement of the berries or do I need to support them with something? Any suggestions at all will be greatly appreciated!

Hi Sarahnicole,

I am fairly new to cake decorating but I have watched a lot of cake challenges...lol! One thing that I can suggest is maybe using toothpicks to hold the strawberries instead of sticking them directly on the cake. just make sure they know that there are toothpicks there. Hope this helps!

I agree with the toothpick idea. Start from the bottom so all the berries rest on the ones below.

Okay, well here it is. I did use toothpicks for the berries on the sides of the cake. She's picking it up at 4:30, I hope it survives the ride! Thanks for the advice!

That looks sooooo yummy!!! I would be a nervous wreck though! I'm afraid the strawberries would "sweat" Did you keep in fridge?

Thanks for the compliments everyone! Actually Michele, I did it all today. Finished it up at 3:30 for a pick up at 4:30 and straight off to the party. I'm a bit anxious to call her tomorrow to make sure it made the car trip. It was so big and she picked it up in her car with little room.
