Help! Partial Dummy Wedding Cake Pricing+

I have a wedding request for a partial dummy cake. icon_rolleyes.gif

The bride asked for several tiers how many - she has yet to decide icon_confused.gif go figure the wedding is this July 3 - a blink of an eye away icon_razz.gif

She wants bottom tier for cutting and the rest dummies . I've never done a dummy cake for a wedding. I've never done a dummy for that mattericon_cry.gif

Also, she wants her top tier for free (complementary) as stated in my wedding folder! Special cake table setup with lights etc.. icon_confused.gif

So I emailed her back and explained that the prices and other info were reflective of a completely edible cake. I asked that she come to a decision real soon with very specific request for her cake.

My concern is pricing for this situation icon_cry.gif what do I do?icon_razz.gif and moving foward, should I have a different pricing for these kinds of request?
This is my first dummy cake request and I'm sure it will not be my last times are slippery for some what should I do???...icon_twisted.gif

Maybe look at the cost of the cake dummy vs. the cost of what the ingredients to bake a similar cake costs and adjust your pricing that way. It would also require less of your time because you wouldn't have to mix and bake. Not sure if this helps you or not, but at least it will give you a bump.

The most expensive thing is the icing and the icing decorations.

Is she just wanting a small cake to look larger?

I would figure up the cost of the icing and all of the work you'll put into it.

It's gonna cost close to what a real cake would cost.

I really think it should not cost less; all the time and money is in the icing and decorations; if you use a dummy they are about the same cost as cake; minus the filling. But I find them harder to ice b/c little bits of foam get in the icing when you ice it. Maybe it is easier with BC; I used royal for a display

Try covering your dummy with plastic wrap or press 'n seal before icing. It should make icing easier and if you are reusing the clean up is a lot easier.

That's what I do, jewels97.

I actually think they're easier to ice than a cake, lol!

The dummies definitely give you better edges, but don't taste nearly as good as actual cake icon_smile.gif

I agree with you, that the flyer she is quoting from is for a fully edible cake. And taking those terms into consideration, I am going to add that information into the contract I am creating, for when my time comes to sell cakes.

It sounds very much to me like the bride subscribes to the philosophy
"If it's free, it's for me."

My opinion is that I would charge half price for each serving which is taken up by a cake dummy.

If you have no ties to this bride, and do not believe that having her as a client can benefit your business, then turn down the job. It's not worth it.

I charge $25 per dummy tier so if she wants 4 its $100 rental plus a deposit ($75) that you will return when the dummies are returned. I use my dummies for display and wedding shows so I want them back. Also when I do them it is always in fondant. Seems everyone wants fondant around here.
