I am making both a vanilla flavored cake and a chocolate fudge cake...any suggestions on fillings...and recipes! Thanks for the help.

Lately I really like oreo filling, in white or chocolate cake. Just mix some chopped up oreos into your buttercream, or into IMBC (my favourite) and away you go! Lemon filling is also really nice in a white cake, you can just use lemon pie filling. Ganache is also a great filling.

You can also mix any seedless fruit fillings or jams into buttercream for a fruit buttercream. Fruit pie fillings work well, also.

Just make sure you use a good dam of icing for any of these, as you probably already know.

Darn it, now I'm hungry!

2 cups whipping cream
1 package any instant pudding flavor ya wanticon_wink.gif

Wendoger, that sounds delicious but does the cake then have to be refrigerated? Many of my cakes would not fit in my fridge becuase I just do this on the side and am not yet equipped for this so a refrigerated filling is hard for me, that's why I ask.

yeppers...but they sure are good....you can also use Frostin' Pride or Pastry Pride and the pudding.....then ya dont have to refrigerate it...

You can buy Frostin'/Pastry Pride at Cash'n'Carry or any restaurant, wholesale supply store.
To be honest, I dont remember how much I mixed with the box of pudding...I was experimenting when i did it. My mom complains that bc is too sweet so I was trying that stuff with different puddings. It tasted pretty good...very light in flavor.

Can you mix the bettercream with a jam and keep it unrefrigerated too?

ganache can stay unrefrigerated for up to two days

it tastes like a mouse when whipped, pm me if you want a recipe or you can lookin the recipe section here.

you can add jam to your bc and leave it out for a day or so.

if you do a fresh fruit filling, you can add 2-3 tb of a complimenting liquor per 1 and 1/2 cups of fruit puree and leave it for a day or two unrefrigerated.
chambord goes great with raspberry or other berries.

I haven't tried the bettercream with a jam yet...only puddings...but now that ya mention it, I willicon_wink.gif
I have someof those sleeves of fruit...those can stay out for like 6 days.
