I have a friend that wants me to make 22 wedding cakes. She wants 1 for each table as the centerpiece. She wants me to do square cakes with light pink frosting and brown ribbon and brown polka dots to serve ten people per cake. My question is can I use a white chocolate ganache in warm weather? We do not like the taste of fondant so if anyone has any ideas of what I should use for the frosting please HELP!!!

Why not just frost in BC if you don't like fondant?

That sounds like a lot of work! Good thing the design is simple!

But still I can't imagine making that many cakes at once! and transporting them!

Good luck!

Is she having her guests sit at the 8ft long banquet tables? The most I've ever seen seated at a round table is 8. Verify her counts before you do all of this work.....that she really is planning on 220 guests.
