Petit Fours- Recipe?

Hey guys, I know I've seen a discussion on petit fours, but now I can't find it.. I know you have to use a tight crumb recipe, but what recipe would that be? I like soft petit fours that are really sweet-- any suggestions?

You want to use a sponge cake recipe.

Pound cake works very will for petit fours. Just bake your favorite recipe (or a box mix) in a shallow pan. If you aren't sure about the pan size, just spread the batter 1/2- 3/4 in thick.

Here is the link to a thread where I describe my method of making petit fours. Most of my cakes are quite dense so they have all held up to being made into petit fours. I think most recipes will, I wouldn't try any cakes that come out really crumbly. Once you add filling, buttercream on top and the poured fondant they are very sweet. The cake is not as important as the other ingredients as they are the flavor that comes through. Good Luck!
