Pineapple Filling

I need a pineapple filling for a wedding cake. It needs to be able to sit out, no refrigeration. Anyone have any ideas?

i think a filling made with pineapple and cornstarch/flour ( i have the recipe at home) would be ok.. my grandma used to keep it out for days on that good ole pineapple coconut cake that everyone ranted and raved over.. oops sorry for the flashback!

Here's one I found on another site.

PINEAPPLE CAKE FILLING

1/2 c. sugar
1 tbsp. cornstarch
1 tbsp. butter
1 1/2 c. drained, crushed pineapple
Dash salt
Pinch nutmeg

Combine ingredients, cook stirring constantly until thick and clear. Cool before using. It is a wonderful filling or middle for a yellow or white cake.
