How do I keep buttercream icing from cracking when delivering and setting up a wedding cake. When I leave my home the icing looks great. But when I am trying to stack the layers the crusting of the buttercream seems to crack. Any suggestions?

Thanks, Mitt

Hmm............it sounds like the cakes are getting moved around too much.

I've only known buttercream to crack when it gets moved/shifted, etc.

I read that it's the moving of the cakes. But, I also read that you can put alittle dab of milk on your finger and put it on the crack and smooth softely. (I guess you can use food gloves also).

Good luck for next time!

More than likely, the boards under the cake layer(s) are not strong enough and flex when the cake(s) are being moved around.

I use 3/16th inch foamcore under all cake layers and I don't find stress cracks in my crusting buttercream.
