When Cakes Settle.

I am completing my first big fondant project. As I've said before I have done small fondant cakes that I have made and served all in one day. This cake has taken me several days and I seem (I think anyway) to notice that the cakes have settled a bit. In one of the cakes I have developed a slight bulge and in the other the mouth seems to have closed a bit. *see "So excited"

Is there anyway to compensate for this at the beginning or am I just imagining it and I did something wrong in the first place?

Bake and forst the cakes in one day. The next day the cake will have settled. The next day apply the fondant. No more puckers, divets, bulges that appear out of nowhere.

Hey, we have the same birthday!!!


I usually bake my cakes then but in fridge overnight. Next day I frost and fondant. This time I baked and froze on Wednesday. Trimmed, frost and fondant on Thursday. By Friday I noticed a bulge and this cake was kept in the fridge. My second cake was baked on Thurday. Trimmed, frosted and fondant on Friday. Kept on counter and by Friday night I noticed a change. Cake is for tonight. Did I do them too far in advance?
