I have 3 cakes to make for sunday and saturday is starting to look super busy for me. Can I make them Friday night? How about tonight?? Do you have any suggestions for storing them or can I just box them?? Thanks so much!!!

baked, iced and decorated my daughter's baby shower cake on Thursday for a Saturday shower. I kept it in the refrigerator. It was moist and pretty darn good if I say so myself! icon_wink.gif

So glad you posted this! I was wondering the same thing. I usually do my cakes just one or two days ahead but this week I had to bake and frost one on wed for saturday due to having too many orders!! I'm scared it's going to be dry when they get to eat it. I froze it first, that should help keep it moist right?

Should be fine but I would refrigerate, some people just leave them on the counter for that long but it seems too long to me.
