Does anyone have any suggestions for filling / icing flavors for a Red Velvet Cake? I was already advised to use white chocolate. Having never had RVC myself I don't know what it is supposed to taste like; someone told me it is similar to Devil's Food but red in color. Any additional ideas besides white chocolate?

My hubby loves red velvet with coconut, so I mix coconut with buttercream for him.

A chocolate fudge or whipped ganache is my favorite for the RVC!

It's kinda half chocolate, half yellow...It has a little bit of chocolate in it but not enough to make it a real chocolate cake...and then, of course, there's the red food coloring in it.

There is so little chocolate in it my belief is that the chocolate is added to make the red a richer color.

I've heard that the original red velvet cake actually didn't have any red coloring in it but that the chocolate reacted with soda somehow and it made the cake red that way...but that's just what I heard. might not be 100% accurate.

I just checked it on Wikipedia and they said that the most common icing is cream cheese. It also had some history on the cake as well.
