My husband's cousin has asked me to make her wedding cake for her. She has told me what she wants, but I don't have any recipes to make it for her...any help would be great. Here is what she wrote:
"We did talk about flavors. We want chocolate cakes. One with mint
filling/flavoring. One with white chocolate filling (or layer) and one with
chocolate mousse filling."
Could I just flavor some bc with mint extract and some with white chocolate?
I have only done a couple wedding cakes, so I am hoping some of you more experienced decorators can help.

What I would do is combine the flavors in the layers. It would be creative and the flavors work so well together. I dont know if you bake from scratch or cake mix, but I would use dark chocolate and white cake flavored with mint in four alternating layers. You could flavor the chocolate cake with instant coffee and it would be simply divine. One it was plated, it would look amazing.
